I've never read Jane Austen’s Pride & Prejudice, so I don't know how close this comes as a retelling, but it's a nice non-mushy romance.  

Apparently all non-humans literally have hearts made of stone.  LOL  

The only jewels in this world appear to be little stone bits that make up part of the non-humans heart.

 

Apparently people not born of the proper bloodlines are forbidden to ride a dragon. Our heroine does though, twice, at the behest of the dragon itself in order to save lives.

 

Saying the matriarch dragon was displeased would be the understatement of the century.

The pompous thing told Aliza there was no way she could possibly love the heir to the dragon rider family, she has dishonored the family, dragons, the realm, sacred promises, you name it (the only thing I can hear is Mushu screaming 'Dishonor on you, dishonor on your cow!'  LOL), and tried to banish her from the realm.  Aliza tell her to piss off and almost gets roasted for it.  Needless to say the dragon did not come to the wedding.
